PJ's Cashew French Toast
I have been obsessed with this recipe since I found it on vegweb.com. The only thing I add is a dash of nutmeg to the batter (and sometimes some fresh berries on top, yum!)
Pj's Cashew French Toast
Ingredients (use vegan versions):
2 cups cashews
1/4 cup water
1/4 cup soymilk (vanilla would be best)
1/4 teaspoon vanilla
1 tablespoon agave nectar (sugar would be ok too)
tiny pinch of cinnamon
bread
Directions:
In a food processor (or blender) mix cashews, water and soy milk. Consistency should be like pancake batter, if its too thick just add a little more water and soy milk. Mix in vanilla, agave and cinnamon. Coat your bread slice on both sides, let excess drip off, coat the pan with oil, spray or earth balance, then cook on both sides. Fix it up with earth balance, maple syrup and powdered sugar and enjoy!
Makes: About 10 or so slices, Preparation time: about 10 minutes, Cooking time: 15 minutes

Vegan Zucchini Bread
One of my co-workers brought in some massive zucchini the other day and the first thought that came to my mind was, ZUCCHINI BREAD. Last night I made two loaves courtesy of this Zucchini Bread Recipe from hell yeah it's vegan. The only change needed was an extra 20-30 minutes of cooking time. I don't know why but it was still soft in the middle after 45 minutes. I put chocolate chips in one loaf, yum, yum! Hopefully, it will be zucchini season up North soon and you can give this a go :)
