Vegan Zucchini Bread

One of my co-workers brought in some massive zucchini the other day and the first thought that came to my mind was, ZUCCHINI BREAD.  Last night I made two loaves courtesy of this Zucchini Bread Recipe from hell yeah it's vegan.  The only change needed was an extra 20-30 minutes of cooking time.  I don't know why but it was still soft in the middle after 45 minutes.  I put chocolate chips in one loaf, yum, yum!  Hopefully, it will be zucchini season up North soon and you can give this a go :)

  1. This sounds delicious! We joined a CSA with Nik's parent's, and there are going to be a ton of zukes over the summmer, so I'll definitely be baking alot with them! yum yum!
